Canelé by Robin Read
at The Counter

The recipe for these mouthwatering little treats was devised by Robin Read, our friend and neighbour in Tunbridge Wells who will be opening the doors to The Counter at 77, Calverley Road in May.

These traditional French cakes originate from Bordeaux and are so called because the translation of canelé is “fluted.” Their elegant shape is created by using copper moulds which help create a caramelised and crunchy outside, as well as a deliciously soft centre which is similar to a crème brulée.

The dessert is said to date back as far as the 15th Century when wine producers in the South West of France still used egg whites to seal their wine barrels and so found themselves with too many egg yolks and the canelé was born!


·       175ml sweetened condensed milk 

·       30g melted unsalted butter

·       220g sugar 

·       120g strong flour

·       90g whole eggs

·       20g egg yolks

·       37ml rum 

·       300ml water

·       30g milk powder


Extra butter for greasing.

16 canelé moulds.



Make the batter a day in advance.

1. Mix the sweetened condensed milk, melted butter, sugar, flour, eggs, yolks, and rum together in a bowl and set aside.

2. Put the water into a pan and bring to the boil.

3. Add the milk powder and whisk until dissolved. 

4. Add the hot water and milk powder mixture to the bowl with the flour, and mix together until smooth

5. Pass the mixture through a sieve and chill for 24 hours.

6. Pre-heat the oven to 200 degrees Celsius.

7. Remove the canelé mixture from the fridge and pour into your greased canelé moulds.

8. Bake for 20 minutes at 200 degrees Celsius in a fan assisted oven.

9. Turn the temperature down to 180 degrees Celsius and bake for a further 20 minutes.

10. Remove from the oven and cool before removing from the moulds.
