The Ultimate Bacon Sarnie

The Ultimate Bacon Sarnie

Indulge in a new sweet and salty breakfast sandwich that harmonises smokey, savoury flavours with a touch of creaminess. The fresh sourdough bread creates a great crunch.

  • 250g pitted dates, soaked in boiling water for 15-30 minutes
  • Juice of half a lemon
  • 1-2 cloves of garlic
  • 1-2 tbsp of olive oil
  • 1 tbsp paprika
  • Sea salt, to taste
  • Smoked back bacon
  • Fresh sourdough, sliced medium thickness

  1. In a blender, blitz the dates, lemon juice, olive oil and paprika until completely smooth. You might have to adjust the olive to get a smoother consistency. Season with salt to taste.
  2. Cook your bacon until crispy.
  3. Grill your sliced sourdough with olive oil or in the bacon fat until nicely browned.
  4. Butter your toast (optional) and then dollop the date aioli, spreading to the edges on both pieces of toast. We recommend a good few tablespoons.

Pile up your bacon, put the sandwich together and enjoy hot!

Top Tip

Use good quality fresh dates, not dried and sourdough that isn’t pre-sliced.
